We have a selection of a la carte Project-Based Learning classes for elementary-aged students (Kindergarten through 5th grade).

We will have on-site, volunteer-run care for babies, walkers, and pre-schoolers.

Registration & Supply Fees

There is a one-time $25 Co-op registration fee for each student taking one or more classes.

Be sure to note the supply fee for each class. These differ from class to class and will be listed beneath the class description here on the website. These fees are automatically added to the tuition cost for each class in the Parent Portal, where you pay for classes after your Co-op application has been approved.

All registration and supply fees are due in full by July 15, 2025 to hold a student’s spot in class.

Clean Foods Regenerative Gardening

(Grades K – 3)

Course Description
The Slow Foods International Clean Foods curriculum invites children to unearth the enchantment of growing vegetables and flowers and develop a natural connection to foods they might otherwise reject, encouraging more adventurous eating habits.
 
Healthy food begins with healthy soil, and the fall semester will be about making mud pies and learning about the wonders of plant life and their communities below the soil.
 
In the spring, they will plan and plant a small garden and take field trips to explore mature vegetable gardens.

Community Garden

Course Description
Dig into the wonders of nature with our hands-on gardening class designed for students in grades 4 through 8! This interactive program teaches the basics of planting, growing, and caring for a garden, while incorporating lessons in science, sustainability, and skill building.
 
Students will explore plant life cycles, garden tool safety, pollinators, and seasonal planting through fun, age-appropriate activities.
 
Whether working in garden beds or creating take-home projects, children will develop a deeper appreciation for nature and the environment—while getting their hands a little dirty!

Nature Journaling: Learning Beauty and Complexity of God’s Creation in Nature
(4th – 6th grades)

Course Description
Through Nature Journaling, students will learn anatomies and complexities of Nature by drawing leaves, flowers, sea shells, pine cones, etc., to deepen the understanding of nature. 
 
The goal of this class is to establish relationships between simple things in nature/real life and different academic fields/subjects students will learn in higher grades so that students will be able to connect real life examples with complex mathematical formulas/Science and English Literatures.
 
There will be no homework in this class. Everything is done in Class, but student’s will be asked to bring materials in nature such as leaves, and sea shells etc.  What-to-Bring will be listed in the Syllabus.

This hands-on, living history class steps students back into the early Florida pioneer days with the help of the Little House on the Prairie series.

Course Description
Tired of mealtime battles with your veggie-avoiding children? You’re in good company! Many parents say their little ones turn up their noses at anything green or unfamiliar.
 
This hands-on programs can help transform food reluctance into culinary curiosity. Turn your picky eater into a food explorer through this joyful, no-pressure experience that will build healthier relationships with food.
 
The Funnest Foods class puts little hands to work creating artistic and delicious dishes in a playful environment. Children who participate in food preparation that is both creative and fun are significantly more likely to sample the finished creation.

Food, Fitness & Wellness

Ages 8 – 11

Course Description
This class is designed to integrate three components of wellness to establish healthy habits for life. Students will explore food, wellness, and fitness, which will culminate in creating a guide for themselves on what habits make them feel good and healthy.
 
Ultimately, students will be able to understand themselves and their bodies more after this course. This class will require students to participate in physical activities as well as interact through class presentations, journaling/tracking (at home), experimentation and reflection.
 
Students will have the opportunity to try new foods (please present any allergies on the first day). They will also try new fitness activities that will vary from running and high intensity interval training to box ball and will require new sneakers and appropriate clothes for performing these activities (loose fitting, breathable material).

Odyssey of the Mind Division I

Course Description
Odyssey of the Mind (OM™) teaches students how to develop and use their natural creativity to become problem-solvers. Imagine being faced with a problem that requires an original solution. It can be frightening. Now imagine not being afraid to solve that problem – that is what OM members learn. This skill and self-confidence will carry over to all areas of their lives. OM brings the classroom to life as students apply what they learn and combine it with their interests and passions to solve our unique open-ended problems. OM also emphasizes teamwork, budgeting, time management, public speaking, and so much more. This international program is designed to help students at all learning levels grow as individual learners, grow as team members, and to reach their full potential.

Students must be less than 12 years old on May 1, 2026 for this group.
 
Teams meet weekly for two hours and competition is in March. More information is available at odysseyofthemind.com.
